summary of my evening - miss jen came over, so I got to see [livejournal.com profile] spicada, which was a lovely surprise! thanks for calling, lady. and i got to meed a friend, brad. who seemed terribly bored by us, but he was quite polite. :) josh got home, and we fought. silly stupid stress. so i went in the bedroom to work, and then we made up later. this morning - yum. :) had lovely mint kiwi porkchops last night, and the request has been made for a recipe, so i am about to look it up and post it. we think it would be good with either a jasmine or lemon rice, or a salad with split grapes, mandarin oranges, and maybe pineapple. :) we had wild rice last night, and it was overpowering. we were also considering only using about 1/4 of the lime juice in the sauce, and marinating the pork shops in it - but if we try it, i'll let you know. :)


the official name is porkchops with kiwifruit-mint sauce. :)

ingredients -
2 pork loin or rib chops, 3/4 inch thick (about 2/3 pound)
dash of salt
dash of pepper
kiwifruit mint sauce (below)
1/2 kiwifruit, peeled and mashed (2 tablespoons)
2 teaspoons chopped fresh or 1/4 teaspoon dried mint leaves crushed (we used fresh)1 teaspoon sugar
1 teaspoon lime juice
(mix all ingredients (kiwi, mint, sugar, lime) to make sauce)

Prepare Kiwifruit-Mint sauce. Spray 10-inch nonstick skillet with nonstick cooking spray. (we used olive oil) Heat skillet over medium heat. Cook pork chops 9 to 10 minutes, turning once, until medium doneness (160 degrees). Sprinkle with salt and pepper. Serve with Kiwifruit-Mint Sauce. Garnish with mint leaves if desired.

It serves 2, and i can give people the daily values/calories, etc, if you want. :) The sauce is *green*, and i was wondering how it would be, but it was wow-worthy. :)
