peanut butter cookies:

1 cup of Splenda
1 cup of peanut butter (crunchy or smooth)
1 egg

Mix, drop in heaped teaspoons, well-spaced, on cookie sheet, bake at 350F until edges feel slightly firm. cool on sheet 10 minutes before removing.

you can also add 1/4 cup of cocoa to this for chocopeanutbutter cookies.

I've got an entire stevia cookbook.
Check with [livejournal.com profile] tabby676 for vegan options, which might be gluten free.

I *really* like the peanut butter cups. and mint patties, but those really, um, to be frank, can get the intestines ROLLING.

Have you tried reeses?

Sugar free chocolates are pretty good. They taste like the real thing to me, but without that blood sugar surge and drop that makes me crave more.

How about fancy cheese, fancy olives, or nuts? Macadamias are lowest in carbs, pricier than other nuts, and delicious. I also adore cashews and pecans. An assortment of the above goodies would certainly please me. There are also the options of gourmet teas and coffees, if they are into that.
